Classic Cuisine in Normandy.

Each day in our Cookery School will focus on your passion for food as you cook, shop and eat your way through the holiday.

There's fun both in and out of the kitchen with visits to local markets and places of interest. There will also be plenty of time for relaxing by the pool, walking around the grounds and woods or even a little personal shopping.

Your time here in Normandy will be dedicated to the enjoyment of good food (including cooking it) fine wines and stimulating conversation in the beautiful 16th century Manoir.

A little about the area...

This area renowned for producing some of the best dairy produce in France, it is the country of AOC (controlled appellation of origin label), Isigny butter and cream.

It is a land of varied resources and large wooded massifs such as the national forest of Cerisy. The Western boundaries of the Paris basin spread forth to the North East of Bayeux, irrigated by the Seulles river and affluents to the verdant valleys nestled in grooves of the rich sedimentary plateau where cereal production is dominant. This is the land of fine limestone and vast fortified farms.

The Bessin area is made up of a dense network of villages and hamlets, each with its own parish church; jewels of the Romanesque and Gothic eras testifying to their foundation centuries ago.

In the immediate vicinity you can find stately residences, manor houses and mediaeval fortified chateaux, dating back to the 16th, 17th and 18th centuries, evidence of the wealth and gradual division of ancient feudal fiefs.

 
Day One. On arrival in Caen you will be met and driven to the Manoir where Champagne and aperitifs will be served. While you settle into your new home we will be preparing your dinner which will be served in the Grande Salle, this will be your chance to get to know your fellow cooks with fine food, wine and great conversation.
Day Two. After breakfast a little gastronomic orienteering! This talk is designed to give you a general idea about the area, what the local specialties are and a little local history. Then it's an introduction to the kitchen of the Manoir where knife skills and lunch will pave the way for an afternoon's hands-on production of all sorts of French delights. Dinner will be served in the Grand Salle.
Day Three. This morning we will visit a typical local food market where we will purchase items that you have always wanted to know how to prepare - like artichokes, fish and seafood. Then back to the Manoir for lunch, a siesta, and then the preparation of the Menu Du Marche for dinner.
Day Four. It's back to the kitchen this morning for tuition of both modern and classical French cuisine in a preparation for the Lunch Menu. The afternoon will be spent in Bayeux visiting the Tapestry or other places of historical interest and time for personal shopping. Back to the Manoir for aperitifs and dinner cooked by our chef served in the Grand Salle.
Day Five. Chef's signature dishes will be succesfully prepared by all during the morning lesson and the afternoon is dedicated to preparations for the perfect Dinner Party Menu - time to put to use all your newly founded skills. We will also try a selection of quick cook meals (20 minutes) which is the time it takes to cook a typical restaurant dish.

This cottage will be available to rent as a self-contained unit in the near future
